You don't earn the reputation of being the king of artisanal distillation in France for no reason. Laurent Cazottes has earned it by bottling magic.


Alongside myriad varieties of biodynamically farmed cereal grains, orchard fruits, stone fruits, and nearly-extinct grape varieties, Laurent grows over 280 types of heirloom tomatoes. From these varieties he produces what is perhaps his most sought-after bottling – an ethereal tomato liqueur.

After harvesting, Laurent first allows the tomatoes to dry before fully destemming and removing bitter components by hand. The flesh of the fruit is then put into an eau de vie of Folle Noire grapes and left to macerate until the tomato essence is fully extracted. The liquid is then racked and the
resulting solids are pressed and redistilled. This distillate is blended with the tomato-infused eau de vie and sweetened with Folle Noire grape sugar to finalize this tomato liqueur.

The flavor profile is an incredible blend of savory and sweet – tomato leaves, cut grass, arugula, cantaloupe, dates. If you've ever grown tomatoes or picked them yourself at a farm, the perfumed smell that lingers on your skin after harvesting is the star of the show here.
