The harvest is done by hand to preserve the integrity of the fruit and, if necessary, allow for a careful selection of the grapes, which are then transported to the winery in 20-kg crates. The bunches are destemmed, and the must is transferred by gravity into open French oak vats and open stainless steel tanks where alcoholic fermentation takes place. During maceration, gentle pumping over and punching down are performed daily. Temperature control is maintained to preserve the varietal's characteristic aromas.
Malolactic fermentation and subsequent maturation in stainless steel tanks until late spring, when the wine is bottled. In some vintages, a brief aging period in large wooden barrels is possible.
Optimal serving temperature between 14 and 18°.
About Comm GB Burlotto
Burlotto is one of the very oldest wineries making Barolo, with its origins dating back to around 1850, with the legendary Giovan Battista Burlotto at the helm. Today with Fabio Alesandria, the 5th generation, running the estate, they make 1 of the most sought-after Barolo with their Monvigliero. To this day, the wine is still foot pressed! They make several other prized Barolo as well, but today we are discussing a different accomplishment.
Pelaverga piccolo, a rare grape indigenous to Verduno in Piedmont, was nearly extinct in the 1970s. Despite its location residing within the Barolo zone and the obviously high value of Nebbiolo there, Burlotto decided to keep this rare variety alive, but even in 1987, there were only 3 hectares registered. Due to Burlotto’s success and the success of Fratelli Alessandria, which is a nearby winery owned by Fabio’s cousins, that also dates back to 1870, this grape is alive and kicking, with its own DOC.
