Pink sandstone, limestone, and granite

Farming:
Sustainable, Organic (Ecocert), Biodynamic (Biodyvin)

Vineyards & Viticulture:
A blend of several different plots of the estate's youngest vines. Since the Mann family believes that vines don't show their true terroir until they are at least 15 years old, this wine is meant to be a pure expression of the Riesling grape. In accordance with their organic and biodynamic principles, all their vineyards have natural grass cover and have compost added in the fall.

Harvest & Vinification:
Hand-picked. Gentle pressing and native yeast fermentation. Aging on the lees.
