The harvest is done by hand to preserve the integrity of the fruit and, if necessary, allow for a careful selection of the grapes, which are then transported to the winery in 20-kg crates. The bunches are destemmed, and the must is transferred by gravity into open French oak vats and open stainless steel tanks where alcoholic fermentation takes place. During maceration, gentle pumping over and punching down are performed daily. Temperature control is maintained to preserve the varietal's characteristic aromas.
Malolactic fermentation and subsequent maturation in stainless steel tanks until late spring, when the wine is bottled. In some vintages, a brief aging period in large wooden barrels is possible.
Optimal serving temperature between 14 and 18°.
