Thanks to their deep and old roots they admirably adapted by mitigating the initial vegetative lushness with a slower growth.\u003cbr\u003e\u003cbr\u003eSurely, they have been strategically helped also by the tough and strong clay that strongly and jealously kept the scarce availability of water, by men who tried to avoid any possible loss of humidity in the deep underground layers and by the location of the Pianella vineyard which rolls down a hill nearby a little lake.\u003cbr\u003e\u003cbr\u003eGrapes have been protected as much as possible from the direct strong sun radiation using the leaves covering of the pergola system of growing. Therefore, the grapes ripeness has evolved regularly and progressively thanks also to the night temperature excursion and to the sporadic but long-waited\u003cbr\u003eshowers that restored balance for plants and men.\u003cbr\u003e\u003cbr\u003ePecorino grapes have been harvested during the first morning hours in small cases and immediately destemmed and pressed. The must has been left resting for one day and then the “pied de cuve” - obtained one week before the harvest with wild yeasts - has been inoculated to ignite the fermentation in terracotta amphoras and Slavonia oak barrel. In the same containers the wine ages on lees for six months until it is carefully blend; then it is bottled to let it evolve on the bottle. Fosso Cancelli Pecorino 2021 is a structured, variegated and intriguing wine with its golden hues and its mediterranean flowers and herbs scents. \u003c\/p\u003e\n\u003c\/div\u003e\n\u003c\/div\u003e\n\u003cp\u003e\u003cbr\u003e\u003cbr\u003eThe resulting wine is dense and concentrated at its core yet has an outwardly expansive feeling and airy aromatics from the slow oxygen contact afforded by oak fermentation and aging. The wine is in no way oxidized in feel, yet it does not possess the inward feel of wine raised entirely in inox or stainless steel. We find a kaleidoscopic range of aromas, from fresh citrus, to herbs, to honey and pear. There is a delicacy and nuance present, although the wine is quite layered.\u003cbr\u003e\u003cbr\u003e\u003cbr\u003eAbout the Ciavolich\u003cbr\u003e\u003cbr\u003eThe Ciavolich family is an old family of wool merchants of Bulgarian origins who, to escape the advance of the Saracen invasion, took refuge in Italy in the town of Miglianico, in the province of Chieti around 1560.\u003c\/p\u003e\n\u003cp\u003eThe transition to land owners happened during the XVIII century. In 1853 Francesco Ciavolich built in Miglianico, opposite his private residence, the first winery, nowadays one of the most ancient and suggestive in Abruzzo, where to work independently grapes that came from the surrounding lands. At the end of the XIX century an important marriage marked the future path of the winery on Loreto Aprutino’s side: the one between Giuseppe Ciavolich and the noblewoman Ernesta Vicini from Loreto Aprutino. Donna Ernesta gave life in her private building in Chieti to one of the most active literary salon of the early century receiving among others her friends Costantino Bardella and Francesco Paolo Michetti.\u003c\/p\u003e\n\u003cp\u003e'40\u003cbr\u003eHer son Giustino was a cavalry officer during World War I and on returning during his retirement, he took care of the family’s properties passing down to his son Giuseppe Ciavolich the love for the land and a burning desire to hand down the estate. In autumn 1943 just after harvest, the German troops while retreating placed their general headquarters on the higher floors of the private residence in Miglianico allowing the family to stay in the underground winery. On 8th December of that same year the SS forced their evacuation.
